Ingredients
250g red pitaya/ dragon fruit flesh
2 Tbsp caster sugar
1 Tbsp lemon juice
1 Tbsp gelatin powder
3 Tbsp water
200g fresh cream
200g whipping cream
Method
1. Chop red pitaya flesh until smooth. Cook with sugar and lemon juice until fruit is tender. Sieve mixture
2. Soak gelatin and double boil until dissolved.
3. Whisk creams until soft peaks and fold into fruit mixture. Mix until blended.
4. Pipe or scoop mousse into glasses and put into fridge until set.
5. Decorate with slices of dragon fruit.
